Meet Chef Mark Wilson - The Firepit Master

Known as the 'Firepit Baron', his charm and bold culinary spirit have led Mark to become an award-winning chef, author, food-entertainer, product developer and professor.

Mark's culinary journey began at the prestigious Culinary Institute of Ontario which paved the way for his dynamic career. He cooks for all types of events from upscale corporate gatherings to backyard BBQ parties and summer food festivals.
Mark has written over twenty cookbooks including Taste Ontario's 2015 Gold Medal Winner "Firepit Grilling" plus "Everyday Cooking", "Plank Grilling Over Fire" and "Firepit Burgers" which all received the Gourmand World Cookbook Awards for Best Barbecue Book. Newer books in Mark's collection include "Beer and Firepit Pairings", and "The Complete Firepit Smoking Guide".

Mark's passion for all things grilled and smoked over open fire is extremely contagious. You'll often find him spreading the firepit cooking gospel through live demonstrations, TV appearances and radio segments to audiences that keep wanting more! Mark can usually be found in his backyard firepit testing out new recipes and techniques he's pioneering.

Smoked Bacon Pizza with Caramelized Apples, Fresh Mozzarella and Rosemary

We fire up the custom firepit pizza oven and bake a tasty pie. The sauce is a caramelized apple butter, topped with mozzarella, fire-roasted apples, maple-smoked bacon and fresh rosemary. Finished with parmesan and a drizzle of the apple sauce. $18

Fish Tacos

Crispy Cod Tacos with Avocado Salsa

Fresh corn tortillas grilled on the plancha, topped with panko crusted cod, avocado salsa, shredded lettuce, pickled onions, cilantro crema, and queso fresco. Served with salsa roja and verde. $15

Campfire Cookie Sundae

Chocolate chip cookies baked in the firepit, topped with smoked marshmallows, chocolate hazelnut spread, and smoked sea salt. Served with bourbon vanilla ice cream. $10
